This course studies techniques for healthy and delicious plant-based cooking. Students will understand the pillars of vegan diets – health, environment, and ethics. The culinary focus is on ingredient substitution, healthy food preparation techniques, and making diverse vegetable, fruit, legume, and grain dishes. Students will understand how to incorporate plant-based cooking in their own home or in a restaurant or foodservice environment. Designed for home cooks, paraprofessional chefs, and professional culinary artists, this six-hour hands-on class provides the building blocks for vegan cooking in your own kitchen or restaurant. Building on the basic vegan food groups – vegetables, fruit, beans/legumes, grains, and nuts and seeds – you will learn essential techniques to make delicious and satisfying plant-based meals.
