Position Description:

Provides professional leadership and direction to kitchen personnel.

To be in charge of the department in the absence of Director.

Train workers in performance of duties

Maintaining inventory and place food supplier orders on a weekly basis.

Prepares work schedules and evaluates work performance of employees

Interview, select or hire new employees.

Supervises serving of meals

Ensure staff is recording daily food temperatures.

Ensure staff is recording record freezer and cooler temperatures.

Assist with menu planning for residents and Catering functions for administration functions.

Verifies kitchen staff follow all recipes and portion sizes correctly

To prepare food required for breakfast, lunch and dinner meal periods.

Ensures all recipes, food preparations and presentations meet Department standards.

Maintains safe, orderly and clean kitchen demonstrates this by example, using proper food handling techniques.

Use standardized recipes based on standard portion sizes.

Ensure kitchen and storage areas are kept clean and organized

To estimate food requirements and control service portions.

To clean kitchen and equipment according to posted schedule.

To check equipment and cooking area to maintain safety and sanitation requirements.

To report and repair/maintenance needs to appropriate departments.

Direct preparation of all foods indicated on menus using standardized recipes and methods of preparation.

To prepare and follow food production schedules.

Clean cooler of left over foods that are outdated.

Must be able to prepare foods following standardized recipes and procedures.

Requisitions and inspects food and supplies, and equipment to maintain stock levels and ensure standards of quality are met.

Input resident diet information into meal tracker system, may assist Dietitian clinical in planning menus

Performs other duties as assigned by director.

Culinary degree or equivalent experience preferred.
